Abstract:
Temporary weaning (TW) of beef calves for 5?14 days is a husbandry practice that is frequently used to help advance rebreeding in postpartum cows. The aim of this study was to compare the behaviour response to two-step weaning with the use of nose flaps, in beef calves that had or not been submitted to TW with nose flaps during the breeding period. Thirteen calves that had been fitted with nose-flap anti-suckling devices from 71 to 84 days of age (TW group), and 11 calves that had not received nose flaps during breeding of their dams (C group) were weaned with a two-step procedure. At 189 days of age, they were fitted with nose flaps and remained with the dams (nose flap period, NF); 14 days later all calves were separated from the dams (permanent separation period, PS). Behaviour was observed from 186 to 193 days of age (NF) and from 200 to 209 days of age (PS). Behaviour data for the NF and PS periods were analysed with mixed models for repeated measures. Before weaning, TW calves had greater proportion of observations suckling and grazing, lower proportion of playing, and remained closer to the dam compared to C calves. During the NF period, C calves had lower frequencies of observations standing, grazing, and drinking water, indicating that calves that had nose flaps during their dams' breeding period adapted faster to the anti-suckling device and the cessation of suckling. During the PS period, C calves had a lower frequency of observations grazing and a greater rate of vocalisations, and TW calves displayed an overall earlier, but shorter behaviour response than C calves. We conclude that the benefits of two-step weaning with nose flaps are greater for calves that have worn nose flaps for temporary weaning during the breeding of their dams. MenosAbstract:

SUMMARY.
Traditionally, plant breeding goals have focused on increasing yield, product firmness, shelf life and pest tolerance, combining ambient adaptation and agronomic management, without making focus on the sensory characteristics. The addition of sensory information into plant breeding programs provides breeders with unbiased tools to measure otherwise subjective quality traits. Combining consumer preferences with descriptive information about the sensory characteristics of products can contribute to the development of consumer-driven improvements in diverse agronomical commodities. In this context, the objective of this review is to describe a series of successful experiences where sensory evaluation has contributed to breeding programs in order to develop cultivars with enhanced sensory characteristics and higher likelihood of succeeding in the marketplace. The application of analytic and hedonic tests are described and discussed. A special consideration is made into fruit and vegetables examples, with focus on strawberry and sweet potato, considering the relevance of consumer acceptance in rising consumption of these products. Rice is also showed as an example of a cereal widely consumed worldwide and where cooking methods display a special challenge in sensory evaluation.

El mejoramiento genético en plantas tradicionalmente se centró en aumentar el rendimiento, la tolerancia a plagas, lafirmeza y el comportamiento postcosecha, combinando la adaptación a un ambiente determinado con el manejoagronómico, sin evaluar en detalle las características sensoriales del producto. En este sentido, la incorporación deinformación sensorial en los programas de mejoramiento genético provee de herramientas objetivas para evaluarcientíficamente lo que de otra forma serían pruebas subjetivas. La combinación de las preferencias del consumidor coninformación descriptiva de las características sensoriales del producto, puede contribuir a la mejora de diferentecommodities impulsada por los consumidores. En este contexto, el objetivo de esta revisión es describir una serie deexperiencias exitosas en donde la aplicación de la evaluación sensorial contribuyó a los programas de mejoramientogenético de forma de desarrollar cultivares con una mejora sensorial y una mayor probabilidad de tener éxito en elmercado. Se presenta y discute la aplicación de pruebas analíticas y hedónicas haciendo especial énfasis en frutas yhortalizas, con foco en frutilla y bonito, dada la relevancia de la aceptabilidad del producto en el aumento del consumo deeste tipo de productos. Se discute la aplicación de esta herramienta en arroz, un cereal ampliamente consumido en elmundo y en donde los métodos de cocción añaden un especial desafío en el contexto de la evaluación sensorial.
