Frente a realidades de alta corrpetitivldad y de recursos ambientales que demandan un manejo cada vez más preciso y responsEble, el concepto de sostenibilidad de la producción de came incorpora nuevas dimensiones e implica nuevos desafíos. Pero a pesar de la mayor complejidad, las respuestas al nuevo contexto requieren trabajar sobre parámetros que no son desconocidos a ninguno de los sectores de la cadena cárnica como son rentabilidad, eficiencia de producción, calidad de producto e inserción en el mercado internacional. Dadas las nuevas demandas, existen herramientas como la selección genómica que le dan al mejoramiento genético animalia posibilidad de realizar un aporte aún más significativo al fortalecimiento de la compelitividad del sector y su crecimiento sustentable. |
