RESUMEN: La industria cárnica bovina tiene gran importancia en el escenario económico y social con cada vez mayores exigencias en relación con la ganancia de peso y calidad de la carne. El hígado es el principal órgano metabólico del organismo y las lesiones parasitarias hepáticas disminuyen la ganancia de peso. Entre las principales enfermedades hepáticas bovinas se destaca la fasciolasis, causada por Fasciola hepatica, que además de ser una enfermedad importante en diferentes especies animales, tiene también carácter zoonótico, habiéndose reportado casos en humanos en el país. Las principales pérdidas ocurren en los frigoríficos, donde los perjuicios han sido estimados en más de 6 millones de dólares anuales solamente por decomisos de hígado. Es responsable también, por menores ganancias de peso, disminución de la producción de la leche y menor fertilidad. A pesar de la importancia de la enfermedad en el sector cárnico mundial, en el Uruguay no hay estudios recientes que determinen los perjuicios económicos directos e indirectos en frigoríficos. Aunque la fasciolosis es
una enfermedad común, las pérdidas productivas y económicas de la fasciolosis bovina crónica, aún no están claras. Este estudio tiene como objetivo evaluar, en un frigorífico de exportación, el efecto de la fasciolosis en los parámetros de calidad de la carcasa y sobre el peso de esta en bovinos de diferentes edades. Fueron evaluadas 30151 carcasas de bovinos faenados en 2016, provenientes de 928 establecimientos. El 34,3% tenían presencia de F. hepatica o lesiones compatibles con la infección. La prevalencia de establecimientos positivos varió de 70% a 100% entre los departamentos. Fue utilizado
un modelo mixto para evaluar si los efectos de la fasciolosis sobre el peso, ajustado por las covariables, varía de acuerdo con los rangos de edad, usando la interacción "edad*F. hepatica". Los efectos sobre los parámetros de la carcasa fueron testeados mediante una regresión logística proporcional (POR). La interacción edad y lesiones por F. hepatica fue estadísticamente significativa (p <0,001). Las diferencias en el peso de la carcasa
entre los animales con y sin lesiones por F. hepatica se observaron principalmente en de tener peores escores en relación con animales con sin lesiones por F. hepatica. SUMMARY: In Uruguay, the meat industry has a great importance in the economic and social scenario increasing demands on animal weight gain and meat quality. The liver is the main metabolic organ, and hepatic parasitic lesions decrease the weight gains. Among the main bovine liver diseases, fasciolasis, caused by the fluke Fasciola hepatica, is an important disease affecting different animal species, and has a zoonotic character, with human cases in the country. The main losses occur in abattoirs, where there are losses of more than 6 million dollars a year, only by liver condemnations, but it is also responsible for lower weight gains, decreased milk production and lower fertility. Even thought, of the importance of the disease in the world meat sector, in
Uruguay there are no recent studies determining the direct and indirect productive and economic losses caused by fasciolasis. This paper aims to investigate the effect of fasciolasis on the parameters of carcass quality and discuss the hypothesis that the effects on weight differs along age ranges of cattle. For this, we analyzed an abattoir data of 30,151 bovines slaughtered in 2016 from 928 farms. The overall animal prevalence of F. hepatica was 34.3%, and the farm prevalence varied between 70% and 100% between departments. A mixed model was fitted to assess if the effects of fasciolosis on weight adjusted for covariates varies over the age ranges using an interaction term ?age*fluke?, and the effect over the carcass parameter were tested using
a proportional logistic regression. The interaction term age and liver fluke was statistically significant (p<0.001), which means that the effect of liver flukes on carcass weight varies according with the age. Differences of carcass weight between animals with and without liver flukes were observed mostly at younger ages range (up to 30 mo.), in which the marked difference was observed at the age range of 23-30 mo. In that category, the difference of the estimated marginal means between animals with the presence and absence of liver fluke was of the order of 6.34 kg. The carcasses of cattle
with liver fluke had 0.16 times greater odds to have worse conformation scores in comparison with carcass of cattle without liver fluke (POR=1.16; 95% CI: 1.07-1.26). In the same way, carcass of cattle with liver fluke have 0.30 (POR=1.30, 95% CI: 1.23-1.39) times greater odds to have worse fat scores in comparison with carcasses of cattle without liver fluke. Therefore, the infection with F. hepatica is associated with worse carcass quality parameters and lower weights, and the effects on the weight differs across age ranges.
